Good for breakfast, lunch or anytime. There are so many different recipes on line who knows who should get credit for the first post. I am sure that these were a thing before the internet though.
As I am in my second month of recovery since heart transplant I have to eat a bit differently such as removing as much salt, butter, sugars etc., from my food. You may be in a different phase of transplantation that allows for these things, please make any alterations needed to fit your allowances.
Ingredients:
Avocado spray
1 Egg
1/3 cup Mozzarella cheese block
2 whole wheat flour tortillas
2 strips low sodium bacon
2 tablespoons fresh cilantro
1 tablespoon heavy cream
Kitchen items needed:
Knife
Bowl
Cutting board
Cheese grader
Spatula
Fry pan
Plate, fork (optional), appetite and a great attitude.
Prep: 5 minutes
Wash Hands
Get your pan, spray with oil and turn on stove to medium putting the pan on the stove.
Gather ingredients
Bacon
2 strips and place in pan
Egg, cream, cheese
Crack egg in bowl add cream
Grade cheese
Turn over bacon
Place cheese into egg mix bowl and mix with fork
Remove bacon to cutting board
Remove pan from heat but do not turn off
Cut bacon into 1" pieces
Cooking - makes one serving
Put pan back on burner and spray with oil
Place one tortilla into pan for 1 minute
Pour egg mixture on tortilla slowly
Place bacon onto egg mixture all over do not pile in the middle
Place one tortilla on top of egg mixture and bacon
Spray with oil
Wash hands
Cook for 3 minutes then flip tortilla by using spatula
Gently slide the spatula under the tortilla, making sure it is centered under, and carefully flip.
Cook for 3 minutes
While cooking rinse cilantro and finely chop
Sprinkle cilantro on top of tortilla and flip
Cook for 30 seconds, remove tortilla to plate and enjoy

This will vary on the ingredients used.
The ones I make are just egg and veggies as an example.

To lower calories cut the recipe in half and use one tortilla folded in half or use egg whites, or use milk instead of cream or remove the bacon and add spinach instead. Have fun with it and make it the way that is best for you.
Side Notes
We didn't use any additional salt because the eggs already naturally have salt, no butter, no additional seasoning. Your body doesn't need to break down layers of sauces and garbage, it's energy needs to be breaking down direct food to feed your healing and promote a heart healthy food regiment.
Play around with these recipe and find something that works for you. Perhaps you only use egg whites or use veggies or do not eat meat.
I cooked these 2 months after my heart transplant.
I was nervous about using a knife with the amount of shaking in my hands but I took my time. You may want to ask for help if it is available if you are nervous about using a knife so soon after transplant and if you experience hand tremors as well.
These are meant to be an easy and quick meal so that you can rest but have a nutritional food as well.
